RECIPE: COCONUT CURRY WINGS
SERVINGS: 4

FOR THE WINGS:
2.5 lb wings (cut into two and clipped)
1/4 cup coconut oil
2 tbsp Jamaican curry powder
2 tsp garlic powder
1/2 tbsp ginger powder
Generous pinch salt and pepper

FOR THE SAUCE:
2 tbsp coconut oil
1 clove garlic crushed and minced
1 tbsp freshly grated ginger
1 tbsp Jamaican curry powder
1/2 tsp crushed red chili flakes
1 cup coconut milk
1.5 tbsp honey
1 tbsp soy sauce
Juice of 1 lime plus 1 sliced for garnishing
Pinch of nutmeg

2 spring onions chopped for garnishing
Handful cilantro chopped for garnishing

1. Preheat oven to 450 degrees F. Line two baking sheets with foil. Toss wings with coconut oil and dry spices. Spread in a single layer on the baking sheets.

2. Bake until crispy and golden, about 40 mins rotating half way through.
About 10 mins before wings are done, start on the sauce.

3. In a medium sized sauce pan over medium heat, sauté coconut oil with garlic, ginger, curry powder,and chili flakes for 2 mins. Add coconut milk, honey, soy sauce, lime, and nutmeg. Bring to a light simmer, and let reduce until it reaches a thicker consistency. Taste, adjust.

4. Once wings are done, toss with sauce in a large mixing bowl. Plate and garnish with green onions, cilantro, and a squeeze of lime.
